Storage
Leave the head intact, remove any damaged outer leaves, and store in the fridge crisper drawer in a perforated bag or container. Don't wash until ready to use to avoid excess moisture that promotes wilting.
Shelf Life
7-14 days typically. If well maintained, a good head can keep for a month, depending on variety and freshness at harvest.
Flavor & Texture
Crunchy and crisp; iceberg is mild and watery, while butterhead and romaine are sweeter and tender. Inner leaves are softer and milder, outer leaves carry a bit more texture and 'green' flavor.
Prep Tips
Trim the core end, and remove any bruised or brown leaves. Separate leaves immediately before use. Soak in cold water for 5 minutes if slightly limp, then spin dry to revive. We grow directly in compost, so watch out for little pieces of wood chips or insects. We recommend giving a quick soak to dislodge them. If washed, we recommend drying with a clean towel or salad spinner; otherwise, any dressing will be overly thin. You can also just quarter it or halve it to cook and serve.
How to Use It
- Use in place of tortillas for low-carb wraps
- Tear into wedges, drizzle with blue cheese and bacon for a wedge salad
- Layer whole leaves in sandwiches or burgers for crunch
- Shred into slaw with cabbage, carrot, and vinaigrette
- Grilled sweet lettuce is awesome!

Watch Out For
Wilted or slimy leaves—discard them promptly. Brown edges signal age unless you're eating Brown Goldring, our fave. Excess moisture speeds spoilage, so keep it dry and wrapped.
Fun Fact
Butterhead and romaine varieties are slow-bolting and sweeter when harvested early in cooler seasons. Iceberg heads were bred for shipping, but our field-fresh heads are more flavorful and tender—you won't find this crunch in store-bought heads.
